Baked Oatmeal

Gluten-free, Dairy-free + Vegan

Makes: 9"x9" pan of oatmeal

1 cup rolled oats

1/2 cup quick oats

2 tbsp flax

125g bag of pecans

1/2 tsp rosemary

1/4 cup hazelnut flour 

1/4 cup coconut oil

1tbsp maple syrup

1/2tsp vanilla

1 pint of blueberries

3 pears

1 can full fat coconut milk

1 sprig of fresh rosemary


  • preheat oven to 300

  • in a medium saucepan melt the coconut oil with the rosemary sprig over low heat so as to infuse the oil slowly 

  • after the oil has been melted for a few minutes add the coconut milk
