Creamy Broccoli Soup

Gluten-free and Dairy-free. Contains coconut.

The best thing to have on a gloomy day!
You can easily substitute cauliflower for broccoli and have a whole different experience!

Prep Time: 8 minutes 

Cook Time: 20-25 minutes
Difficulty: Medium

INGREDIENTS
1 cup rolled oats

1/2 cup cashews
1/4 cup pumpkin seeds

1/4 cup buckwheat groats

2 tbsp. ground flax (optional

1/2 tsp cinnamon

1/4 tsp salt

1/4 cup coconut oil

2 tbsp. honey (can be substituted for maple syrup)

 

Tips: For a little extra health boost, add ground flax! 
          You can add a little more coconut oil if you want a bit of a richer taste


INSTRUCTIONS

  • Preheat oven to 300F

  • ​

  • Remove from the oven and let cool for 5 minutes before eating

  • ENJOY!​​

 

To help cool, pour out into the saucepan and stir  every 5-10 minutes. After 20-30 minutes, whenever the soup is more of a room temperature and there is no steam when stirred you can store it in an airtight jar in the fridge for up to one week.
