Just Like Granny's Granola

About the Recipe

Ingredients

  • 1 cup rolled oats

  • 1/2 cup cashews or almonds

  • 1/4 cup pumpkin seeds

  • 1/4 cup buckwheat groats

  • 2 tbsp. ground flax (optional

  • 1/2 tsp cinnamon

  • 1/4 tsp salt

  • 1/4 cup coconut oil

  • 2 tbsp. honey (can be substituted for maple syrup)

Tips: For a little extra health boost, add ground flax! You can also add a little more coconut oil if you want a bit of a richer taste

Preparation

  • Preheat oven to 300F

  • Prepare a baking sheet with parchment paper

  • In a medium bowl mix together the oats, pumpkin seeds, buckwheat groats, salt, cinnamon, and flax if you are adding it.

  • Crush the cashews into smaller pieces by either pulsing in a food processor or placing in a bag and smashing with a rolling pin (which can be fun!!)

  • Add the nuts to the bowl

  • In a small saucepan, add the coconut oil and honey.

  • Heat on medium until the oil and honey have melted

  • Remove and add to the granola mixture

  • Blend well so that there are no dry sections.

  • Spread out evenly over the whole baking sheet

  • Place in oven on middle rack

  • Bake for 20 -25 minutes stirring the granola around every 8-10 minutes

  • Remove from the oven and let cool for 5 minutes before eating

  • ENJOY!​​

While still on the sheet, stir the granola to cool evenly so that it is ready to be stored. After 20-30 minutes you can store it in an airtight jar, kept in a cool dry cupboard for up to one week
