About the Recipe
Ingredients
1 cup rolled oats
1/2 cup cashews or almonds
1/4 cup pumpkin seeds
1/4 cup buckwheat groats
2 tbsp. ground flax (optional
1/2 tsp cinnamon
1/4 tsp salt
1/4 cup coconut oil
2 tbsp. honey (can be substituted for maple syrup)
Tips: For a little extra health boost, add ground flax! You can also add a little more coconut oil if you want a bit of a richer taste
Preparation
Preheat oven to 300F
Prepare a baking sheet with parchment paper
In a medium bowl mix together the oats, pumpkin seeds, buckwheat groats, salt, cinnamon, and flax if you are adding it.
Crush the cashews into smaller pieces by either pulsing in a food processor or placing in a bag and smashing with a rolling pin (which can be fun!!)
Add the nuts to the bowl
In a small saucepan, add the coconut oil and honey.
Heat on medium until the oil and honey have melted
Remove and add to the granola mixture
Blend well so that there are no dry sections.
Spread out evenly over the whole baking sheet
Place in oven on middle rack
Bake for 20 -25 minutes stirring the granola around every 8-10 minutes
Remove from the oven and let cool for 5 minutes before eating

While still on the sheet, stir the granola to cool evenly so that it is ready to be stored. After 20-30 minutes you can store it in an airtight jar, kept in a cool dry cupboard for up to one week
