About the Recipe
Gluten-free and Dairy-free. Contains nuts and eggs.
Ingredients
2 medium sweet potatoes/yams (enough for 1 1/4 cup)
2 eggs
1/4 cup coconut oil
1/2 tsp salt
4 tbsp cocoa
1tbsp carob (just add more cocoa if you don't have carob)
1/4 cup maple syrup
1/2 cup coconut flour
1/2 cup almond flour
1tsp vanilla
1 tbsp coffee
1 tbsp flax powder
1/2 cup full fat coconut milk (the cream at the top of the can is best)
1/4 cup chocolate chips
Preparation
roast the sweet potatoes at 350 for 1-2 hours depending on the density of the potatoes. once you can poke through easily with a fork then take them out, cut them in half and let them cool for an hour.
You can also do this part the night before and then put them in the fridge after they've cooled down so that you have them ready to use the next day!
line your 9x9 pan with parchment paper and set aside
preheat your oven to 325
mash up the potatoes very well then add to a large bowl
melt coconut oil just enough so that its mushy and not too hot. add to bowl
add in maple syrup, vanilla, coconut milk, and eggs stir until combined well
in a separate medium bowl add the dry ingredients; almond flour, coconut flour, flax, cocoa powder, carob powder, chocolate chips and salt. mix until combined evenly
add the dry ingredients to the wet and fold in, making sure that there are no dry clumps left. Do not over mix once there are no clumps left.
carefully pour or spoon your mixture into the lined pan
spread out evenly and flatten with a spatula
place in oven and bake for 40 minutes
poke with a toothpick to make sure it comes out clean, sometimes they need an extra 2-5 minutes.
take out of oven and let settle for 10 minutes.
grab the edges of parchment paper and gently lift out of pan to place on cooling rack. OR place the cooling rack on top of the pan and quickly flip the pan over on top of the cooling rack.
let them sit for at least another 20 minutes before digging in!
these are delicious warm BUT they are even better chilled as that's when they are the fudgiest! But there's no wrong way to enjoy them so go for it!
