Vegan Pesto

Gluten-free and Vegan. Contains tree nuts.

Super yummy and super easy!

Prep Time: 10 minutes
Cook Time: 5-7 minutes

Makes: 250mL

YOU WILL NEED
1 large fluffy handful of basil!

1 handful of spinach

1/3 cup pine nuts

1/4 cup olive oil

1 tbsp. vegan parmesan 

2 tsp lemon juice

4 garlic cloves

1 tsp salt

pepper to taste


INSTRUCTIONS

  • Turn oven on to 300

  • while heating up peel and smash garlic and add into a small food processor 

  • add oil, parmesan, lemon juice, spinach basil, and salt

  • place pine nut onto a baking sheet with parchment paper and roast for 10-15 minutes, checking every 5 minutes to see if they are a bit golden brown on top

  • once the pine nuts are done, pour them into the food processor

  • pulse on high a few times to get all the spinach and basil chopped up enough to blend.

  • blend on medium for 1-2 minutes.

  • you can make the consistency however you like, blending less for a more rustic, chunkier look, and blending more for a smoother finish

  • do a taste test and decide if you want pepper or not! 

  • Enjoy with pasta, gnocchi or as a tasty spread for a charcuterie!
