Vegan Pesto
Gluten-free and Vegan. Contains tree nuts.
Super yummy and super easy!

YOU WILL NEED
1 large fluffy handful of basil!
1 handful of spinach
1/3 cup pine nuts
1/4 cup olive oil
1 tbsp. vegan parmesan
2 tsp lemon juice
4 garlic cloves
1 tsp salt
pepper to taste
INSTRUCTIONS

Turn oven on to 300

while heating up peel and smash garlic and add into a small food processor

add oil, parmesan, lemon juice, spinach basil, and salt

place pine nut onto a baking sheet with parchment paper and roast for 10-15 minutes, checking every 5 minutes to see if they are a bit golden brown on top

once the pine nuts are done, pour them into the food processor

pulse on high a few times to get all the spinach and basil chopped up enough to blend.

blend on medium for 1-2 minutes.

you can make the consistency however you like, blending less for a more rustic, chunkier look, and blending more for a smoother finish

do a taste test and decide if you want pepper or not!
