Vegan Tacos

Gluten-free and Vegan.

4 portabello mushrooms

8 large shitake mushrooms

1 red pepper

1/2 lime juiced

1 pkg of taco seasoning 

1 avocado

Salsa of your choosing

Vegan cheese of your choosing 

1 can of refried beans

1 bunch of green onions

olive oil



  • chop and sautee all of the mushrooms the and in the tac seasoning and about 1/3 cup of water. Adding in the lime juice, stir often until the taco seasoning mixture had coated the mushrooms and creamed up a bit. Set aside

  • chip the pepper into small cubes and sautee with olive oil in a separate pan until they have softened. Set aside

  • slice the green onions and set aside in a small bowl

  • warm the refried beans I an small saucepan and set aside

  • peel and slice avocado

  • This amount will make 6-8 tacos when using medium-sized tortillas

  • Assemble as you wish! Enjoy!
